    In blender, fill container with:

    • 1 to 2 garlic cloves
    • 4 ripe tomatoes, any variety
    • 1 small green pepper, seeded and sliced
    • 1 small onion, peeled and sliced
    • 1 cucumber, coarsely sliced (peeled if desired)
    • 1/2 tsp salt (or to taste)
    • 1/4 tsp pepper
    • 2 tbsp extra virgin olive oil
    • 3 tbsp red wine vinegar
    • 1/2 cup ice water
    • 1/4 cup parsley, coarsely chopped
    • 1 tbsp fresh basil (or more depending on your preference)


    1. Cover and blend on high speed for a few seconds only, or until all vegetables and herbs are coarsely chopped and mixed. Chill until serving time and serve with an ice cube in the middle to make it extra cold and delicious!
      Garnish with chopped herbs, if desired.
