Our meat department is simply the best in the area with the largest selection of locally-grown, humanely-raised meats with no added hormones or antibiotics. All of our ground meats are made in-store from our own trimmings and whole-muscle cuts. No pre-ground factory products are ever used.

Meat Department

The Co-op’s Meat Department offers the region's best and most considerable selection of prime meat. Our friendly and knowledgeable team loves seafood as much as their jobs. Most of the meats you will find in the Meat department are cut in-house and packed by our team of butchers. We offer custom cuts; feel free to ask according to your specific needs.

Fresh and Ready To Cook

All of our fresh meat is vacuum-sealed, without using Styrofoam, and always free of preservatives.

Bulk-packed chicken and special orders are available. We also offer a wide variety of ready-to-cook, marinated, and rubbed meats, including:

Our BFC Made Sausage

Our locally famous BFC-made Sausages are made in-house, using savory, seasonal fresh ingredients (and local when available) and all-natural casings, using our own tried and true recipes.

Several varieties are available in chicken, pork, or beef. Except for our seasonal beer bratwurst, all of our sausages are gluten-free.

Our sausage is available frozen in links, usually with 2-3 links per pre-pack. Pork or chicken breakfast sausage and chorizo sausage are in bulk packs (pre-packed sausage without the casings). Seasonal recipes include Bratwurst, Apple-Cheddar Sausage, and Meyer Beef Texas Hot Links.

Seafood Department

Whether you are seeking Faroe Island Salmon fillets cut to order, or Wellfleet oysters for your next party, our seafood service counter will be glad to help you out. Fresh varieties of fish and shellfish arrive at our door six days a week, both farm-raised and wild-caught, and many from the USA.

Passionate Team

The Co-op’s seafood case contains fresh and saltwater fish and seafood, including shellfish and crustaceans.

Our seafood team is passionate about fish. You will find them courteous, friendly, and highly knowledgeable about the fish we sell, from cook times and preparations to great recipe ideas.

You will find our fresh fish and seafood are one or more of the following:

  • Wild Caught
  • Sustainably Farmed
  • Local, Domestic, and/or International

Frozen Seafood

Our frozen cases have many options, including seafood sausage, ravioli, frozen fish stock, and chowders.

You will also find traditional prepackaged favorites in the frozen case, such as breaded fillets, appetizers, cooked shrimp, and fish sticks

You will find excellent smoked salmon (BFC packed) in the cold cases and a full display of Ducktrap of Maine smoked salmon, mackerel, and trout.

Sustainable and Fresh

The Seafood Department focuses on New England and wild-caught seafood whenever possible, ensuring we have sustainably farmed and freshly caught fish available in our seafood case.

The Seafood counter is a regular stop for informed shoppers who love seafood. We take great pride in offering the freshest possible seafood with deliveries six days a week.

Spotlight on Meat & Seafood

The Meat department started at the Brattleboro Food Co-op in 1988, and we have continued to provide the largest selection of naturally raised, certified humane, fresh meat in the area ever since. We offer a wide variety of cuts of all different species, including fresh pork, lamb, beef, poultry, and seafood, much of it from local and regional farms. And unlike other grocers, we cut, slice, trim, and package most of our products in-house, much like a traditional butcher shop.

Regional & Local, Natural, Humane

When I first started here, the thought of having all the beef come from the Northeast was just a dream, and it didn’t seem plausible for the volume we produce. Now, 100% of our beef is sourced regionally, with nearly everything coming from here in Vermont and neighboring New England and New York State farms, which limits the number of trucks driving from the Midwest and beyond and minimizes our carbon footprint. Our beef purveyors include Hardwick, Northeast Family Farms, Black River, Meyer Angus, and Pineland. Hardwick is a 100% grass-fed line that’s so popular we typically go through a side a week (half a steer). We receive what are known as “primal cuts” from them, which we trim, cut, and merchandise for display. We buy all of our chuck (shoulder) beef from Pineland Farms. This supplies most of the ground beef you will find here at the Co-op. Most, if not all, supermarkets and grocery stores receive their hamburger coarse-ground and then regrind it. We maintain a uniquely high standard for producing fresh hamburger at the Co-op by grinding everything in-house.
