Free Adult Class! Hosted by Robin Matathias (Adjunct Professor of Environmental Studies at Keene State College). Food Choices is a series of classes exploring the connection between our food choices, food production systems, and their impacts on human and environmental health. Each day we make decisions about what to eat, and this simple daily act can have profound outcomes. These classes will teach you to make food choices based on the water use, land requirements, energy use, and waste that go into producing what we eat. Team Work Opportunity: Hearts!
Calling all crafty shareholders: Help us fill the Co-op with L-O-V-E by creating and hanging stained glass (paper) hearts and garlands in time for Valentine's/Galentine's/Palentine's Day! This beautification project will bring much-needed warmth to the frigid February days. Simple instructions will be offered with plenty of room for your creativity. Snacks and beverages will be provided. If you can use a stapler, scissors, glue, and want to earn 2 work hours, this is the TeamWork Event for you! TeamWork Opportunities are a new way to earn shareholder hours by working together on short-term projects in the store or in the community.

DIY Beekeeping
Make a bee-line to the co-op to learn how to start your own hive of little pollinators! Nancy Frye will introduce you to beekeeping, including bee behavior, hive set-up, and apitherapy (medicine based on bee products). And she’ll show you some of the things you can make with honey and wax, including candles, cosmetics, bowl toppers, and mead. Make sure to register early for this free class! Nancy Frye maintains 25 hives in West Brattleboro. In 2021 she was named “Educator of the Year” by the Vermont Beekeepers Association, and she is the founder of the Brattleboro Area Beekeepers’ Guild.

DIY Aged Farmstead Cheese and Petit Suisse
Have you ever wanted to try your hand at cheese-making? In this class, we’re bringing you two recipes in one. Co-op Educator Lisa and Shelby of the Cheese Department will guide up to ten students in making these delicious cheeses. Petit Suisse, developed by a Swiss immigrant in Normandy, is a mild, rich, soft cheese that goes wonderfully with fruit and is featured in many French desserts. The aged Farmstead Cheese was developed in Amish country. It has a creamy, crumbly texture and a fascinating flavor yet requires minimal equipment. Make sure to register early for this free class! For this workshop, we are featuring beloved children’s author Eric Carle! Participants are invited to listen to The Very Hungry Caterpillar and make a fruit salad to enjoy together afterward! Co-op Educator Lisa and Herbalist Susan Stanton will guide up to ten students in making linen eye pillows featuring a blend of herbs you customize yourself. We’re months away from food truck season but one afternoon away from a hot, crispy dosa of your own creation. In this hands-on class, Nash and Leda will show you how to cook their gluten-free, vegan dosa batter into scrambled egg dosas, maple dosa pancakes, dosa waffles, and more. You’ll leave with the tools to become your family’s dedicated dosa chef! Nash Patel and Leda Scheintaub are the owners of Dosa Kitchen Food Truck and Factory and the authors of Dosa Kitchen: Recipes for India’s Favorite Street Food.
